This breakfast is so incredibly delicious! It is the perfect mixture between cake and porridge and it tastes just like dessert. The fruits add the perfect amount of sweetness and the almonds give it a nice crunch. It also looks very nice and colourful. This is the perfect dish to make to impress friends and family at a brunch.
This recipe is also very healthy. The berries contain powerful anti-oxidants and the cinnamon helps reduce your blood sugar so you are not on a sugar high after this.The banana will give you one of nature’s best source of potassium, which is essential for muscle recovery and maintaining good heart function. The egg whites add good protein without disturbing the taste and the oats contain great fiber to keep you full for hours!
Ingredients (serves 1):
1/2 cup oats
2 egg whites (1/4 cup)
1/2 banana, mashed
Cinnamom to taste (1/2 tsp)
Maple syrup to taste (optional)
1 small handful of raspberries or mixed berries
1 small handful of slightly crushed almonds
Coconut oil, to grease
Preheat oven at 180 C. Place oats in a bowl and pour boiling water over (just enough to cover them).
Let them absorb the water (this takes about 2-3 minutes). Then, add the mashed banana, egg whites, cinnamon, maple syrup, berries and almonds to the soaked oats.
Grease a small-medium ramkin with coconut oil (or any other oil) and pour the mixture in. Add sliced banana pieces and berries on top to make it pretty.
Bake for 15-20 minutes at 180 C.
