This quinoa salad is literally a burst of flavours and colours! The spices contrast beautifully with the sweetness of the orange and the beans add a wonderful earthy flavour. This salad is also packed with nutrients and it’s really satisfying. The quinoa and beans give you great plant based protein and the avocado provides your body with essential healthy fats.
This recipe keeps well so you could make it on a Sunday and enjoy it during the week when you don’t have much time to cook.
Ingredients (serves 6)
1 cup quinoa
2 cups of water
1 peeled orange, diced
1 540 mL tin of black beans
1 red pepper, diced
1/2 red onion (or all if you really like onions)
1 398 mL tin of corn
For the dressing
The juice of a lime
3 tbps olive oil
1 tsp cumin
1 tsp chili powder
Start by cooking the quinoa. Place the quinoa in a pan with 2 cups of water. Bring to a boil, cover and let simmer for 10-15 minutes.
While the quinoa cooks dice the orange, the red pepper, the onion and the avocado. Rince the beans and the corn.
Prepare the dressing by mixing all the dressing ingredients in a small bowl.
Once the quinoa is cooked (if you are not in a hurry let the quinoa cool down) mix in the orange, the black beans, the red pepper, the onion, the corn and the avocado. Sprinkle some chill flakes and fresh cilantro.
Finally, pour the dressing on top.
