These oatmeal cookies are so incredibly easy to make and delicious. They only require 5 simple ingredients and are ready in 30 minutes max! They remind me of the soft «galettes» I would love to eat in school except this version does not contain butter, refined sugar or gluten. They make a great mid-morning snack or afternoon pick-me-up as they are full of fiber from the oats and protein from the nut butter.
Ingredients (makes 12 cookies) :
3 large ripe bananas
5 tbsp almond butter (or any other nut butter, peanut butter works well)
1 tbsp coconut oil, melted
3 tbsp maple syrup (or honey)
2 1/2 cups of oats
Preheat the oven at 175 C . In a bowl, mash the bananas with a fork. Once they are mashed, add the almond butter, the coconut oil and the maple syrup. Stir in the oats until they are all covered with the mixture. Line a baking tray with parchment paper. Using your hands, make balls of cookie dough and spread them on the baking tray. Leave them a bit thick if you like your cookies soft or thin if you prefer them crunchy. Bake for 15-20 minutes until they are slightly golden. Let cool for 5 minutes before eating. (This is the hardest part, I know!)
