The best spring salad!

delicious mango salad I am so grateful that the weather is finally getting warmer and that the sun is shining brighter. This winter was exceptionally cold and long for us in Québec. I love how the world seems to change when the sun comes out : suddenly everyone seems happier and full of life. The food gets better too, more fruits and vegetables are in season and you can grow your own garden. This salad tastes amazing and is the perfect way to welcome spring. The creamy avocado goes perfectly well with the sweet mango and pomegranate while the arugula adds a delicious peppery taste. The dressing is also incredibly simple to make and adds extra flavour to the salad. However, it could also be left out, as this salad already has so much flavour by itself. Finally, this dish can be considered as a main meal because it contains quinoa and chickpeas which add great protein, fiber and complex carbs. beautiful pomegrenate

Ingredients (serves 4)

1 cup quinoa

1 540 mL can of chickpeas

A couple handfuls of arugula

1/2 pomegranate

1 mango

1 avocado


1 lime

2 tbsp olive oil

1 tbsp sesame oil


Start by cooking the quinoa. While the quinoa cooks, open the pomegranate (I open cut mine in half and then put it in water) and take the seeds out. Rinse the chickpeas and chop the mango and avocado into small pieces. In a small bowl, mix all ingredients for the dressing. Once the quinoa is cooked, mix it in a big bowl with the chickpeas, pomegranate seeds, mango, avocado and arugula. Pour the dressing over and enjoy! delicious mango salad!
