This is definitely one of my absolute best recipes ! I am so proud of how deliciously healthy it turned out. Gluten-free, flour-free, dairy-free, refined-sugar free, nut-free and oil-free, it is the perfect treat suitable for everyone. The brownies are ready really quickly too and they only require 6 simple and inexpensive ingredients.
The banana and pitted dates sweeten the brownies so perfectly that added sugar is not necessary. The chickpeas make the brownies moist and soft as well as adding great plant-based protein, fiber and essential nutrients such as iron, phosphate, calcium and potassium. Finally, the cacao powder contains lots of magnesium, which is great for hormonal balance and overall wellness. Isn’t great to eat something incredibly tasty while knowing that it contains loads of goodness for our bodies?!
(These brownies will soon be available for sale at Oka National Park if you would like to purchase them)
1 cup pitted dates
1/2 cup water
1 18 oz. tin of chickpeas
1/4 cup cacao powder
1/2 cup dark chocolate, melted (you could leave the chocolate out and add more cacao if you don’t have any)
1/4 cup dark chocolate chips or chopped nuts (optional)
Preheat oven at 175 C.
Start by placing the dates and water in a pan. Heat it until the dates become soft and you can easily make them into a puree using a spoon.
In a food processor (or using you hands) blend the rinsed and drained chickpeas until they form a creamy mixture
Mix the pureed dates with the blended chickpeas, one mashed banana, 3 eggs, the cacao powder and the melted dark chocolate. Add in chocolate chips if desired.
Add to a baking dish lined with parchment paper. Bake for about 30 minutes, or until a fork comes out clean.
Let cool down for 15 minutes. This step is essential for the brownies to stick together.
